Wild Woman Panacakies

This is the wild woman's favorite pancake recipe. It's actually the 2nd thing she says in the morning. There's a few ways to make them depending on how you like your panacakies :)

Wild Woman's Panacakies
1 cup super flour
1 tsp baking powder
1/4 tsp baking soda (for fluffy pancakes use 1/2tsp)
1/2 tsp salt
2 tbs sugar (I usually cut it back to 1 tbs)
3/4 cup milk
2 tsp white vinegar *(or you can use 1 cup buttermilk)
1 egg, beaten
1/2 tsp vanilla


If your using sour milk instead of buttermilk, mix first and let set 5 mins. Mix all your dry ingredients together. Combine the wet with the dry, whisk all toghther and don't mix it again. Let sit while your waiting for your pan or griddle heat up. The batter will be really fluffy and airy-don't worry, it supposed to. This is the perfect amount for 2-3 people.
