I'm trying to learn more about this whole crazy blogging thing. I know I keep changing the background and everything else but once I figure out how to put up the free one I found from another site, I'll be leaving it be! :)

Wild Woman Panacakies

This is the wild woman's favorite pancake recipe. It's actually the 2nd thing she says in the morning. There's a few ways to make them depending on how you like your panacakies :)

Wild Woman's Panacakies
1 cup super flour
1 tsp baking powder
1/4 tsp baking soda (for fluffy pancakes use 1/2tsp)
1/2 tsp salt
2 tbs sugar (I usually cut it back to 1 tbs)
3/4 cup milk
2 tsp white vinegar *(or you can use 1 cup buttermilk)
1 egg, beaten
1/2 tsp vanilla


If your using sour milk instead of buttermilk, mix first and let set 5 mins. Mix all your dry ingredients together. Combine the wet with the dry, whisk all toghther and don't mix it again. Let sit while your waiting for your pan or griddle heat up. The batter will be really fluffy and airy-don't worry, it supposed to. This is the perfect amount for 2-3 people.

The Cardboard Carpenter

My man can do it all! He can take an enormuos cardboard box, left by movers in our stairwell, and turn it into a little wild woman's cottage! At first it started out as a fort to play in while Mommy was at her class...

Then turned into a playhouse after cleaning and naptime. We had to stay in Aud's room while Daddy worked on his surprise...

We thought it would be best to move the playhouse into Aud's room (don't mind the cardboard on the windows, the wild woman is an early riser and when there's light in her room it's even earlier....) 

After we moved it in her room, Ben deceided that it needed a roof, not just any roof, a real cottage roof. So the playhouse underwent some remolding and it now has a roof and it refered to as Aud's Cottage :) ....

Super Flour!!!

Aud loves panacakies and waffels so very much so, I found and did some tweaking on a flour recipe to use. We use it in everything from of course pancakes and waffels to bread and pizza dough.

Super Flour
3 cups whole wheat flour (King Arthur is my favorite)
3 cups all purpose flour
2 1/2 cups wheat germ
1/2 cup ground flax seed


Mix all together and keep in the freezer or fridge.

Jaimie's Sausage Stuffed Zucchini Recipe

I think it's about zucchini season at home and thought I'd pass along something I made last night. Of course I thought about taking a picture after I slopped and made a mess of it but I'll be making this again soon, at least that's what Ben said last night :) You can use regular sausage fresh or premade. I only used plain ground pork because that was what I had in the freezer.

Jaimie's Sausage Stuffed Zucchini

Large pot of salted boiling water

4 -5 zucchini's halved, ends cut off and seeds removed (I used a mellon baller to scrape them out and make a nice boat shape)

1lb ground pork (or sausage, if using sausage- no need to season with ingredients below)

2 tsp italian seasoning

few shakes of garlic salt or lawrys seasoning salt

1/2 to full jar of favorite pasta sauce (ours is Newman's Own Sockarooni)

Parmesan cheese

Italian Shredded Cheese Mix

Preheat oven to 350. Drop zucchini boats into boiling water for 2 minutes. Remove and place in greased 9x13 pan. Brown ground pork and add seasonings. (Remember, don't add seasonings if you have actual sausage) Add desired amount of sauce, stir till combined.

Spoon meat and sauce mix into zucchini boats evenly. Top with parm cheese and shredded cheese. Bake in preheated oven about 15 mins. or until cheese is bubbly. Enjoy!

The writing on the wall.

Should have known when all was quiet last Sunday morning. Aud was all ready and was entertaining her self with her "colors" (crayons), I was getting ready in the bathroom, and Ben was on the couch. I came through the living room door way and found the wild woman decorating the wall.

It's the first time she's colored on the wall. At first I wanted to laugh so hard but I got down on her level, told her what an awesome color-er she is but we do not color or write on anything but paper. We've already had the conversation about not coloring on ourselves....Fast forward 30 mins and we're in church and she's coloring on the bulletin, misses the paper, and writes on herself with pen. She looks up real fast and says, "ooh geez, no no no no " haha I about died laughing. I gave her a kiss and said it was an accident and Mommy knows you didn't mean to. She's so smart!!

Every other Saturday Mornin'

Every Tuesday and Saturday, the town has a farmers market. Most all of the little villages have them as well but, we're closer to town. Since Ben has off every other Sautrday, we go down for either a 500g container of blueberries (or "sures" as the wild woman calls them) strawberries, bratwurts (sausage) , brotchen (bread), and our favorite- fresh squeezed orange juice!

It's become a tradition that as soon as we finish breakfast, we get dressed, put our hats on and go downtown. Aud's favorite part is chasing the "duckas" (pigeons) in or out of the stroller. Ben started chasing after them with Aud in the stroller and would tell her to "get-em Aud"!! Now Aud yells "GET-EM DADAA.... DUCKA DUCKA DUCKA DUCKA!!!" It's soo funny! She'll wave and tell the people hi and bye- just melts me. There are also a lot of people who bring their dogs- another favorite of the wild woman's. She'll see one and yell "SIT, NO NO NO NO , HEEL, DOWN, YES"! She'll go through her whole vocabulary of dog commands on one dog in 5 seconds! Our 17month old is quite the dog trainer!

This morning Ben took Aud so I could sleep a little bit longer. I was snuggling back into bed when Ben opened the living room door to go to the bathroom and I could hear, "Bebe, Momma's sleeping so we need to be quite, shhhhhhhh okay?" Then her reply, "SHHHHHHHHHHHHHHHHHHHHHHH, SHHHHHHHHHHHH" at the volume of normal speech. She makes me laugh constantly. What I love even more is hearing Ben and her together. It's really hard sometimes to go and do what I need to when I know they are in the other room or at home having a blast. She's Daddy's helper and is such a little Ben, it's unreal. Like this morning when they came in to wake me with a tray of breakfast in bed. Eggies, toast, greek yogurt, decaf coffee, and posies. It was the sweetest, absolute sweetest. Ben had the tray and Aud had the posie. He said Audrey wanted to do something to serve Momma this morning. I know, he's fantastic! Ben put the tray down and Aud climbed into my lap to "help". She took over the toast and kept licking the coffee spoon. I'm so blessed to have my family!!!! Okay back to farmers market.

As my Man would say, "Jaimie's hobby of the week" :)

So for my hobby this week, I'm trying to make the wild woman a nightgown. I have no experience sewing clothes what-so-ever. Quilts, you bet, but no clothes. And of course I did a typical Jaimie thing and assumed that all I really needed to do was sort of follow the tracing of one of her nightgowns she has now and just sew it together. haha I can laugh at myself but not enough to show you a picture of the first one! haha Wow. When Ben came home he just smiled and encouraged me. I'm so blessed to have such an amazing husband. I'm also blessed with an awesome Mom-in-Law who will hopefully help me in my sewing pattern illiteracy when we come home! :) It's just one of her many talents! Love you!!!

Needless to say, I'm researching patterns and the right way to do things! I'll put pictures up when I can find a pattern I like. I'm going to the thrift store to get some men's t-shirts for the fabric. I'd like to eventually use Ben's shirts for her nighties so she can have something of his when he's away. Sigh.

Poor Forgotten Blog...

Poor blog, I won't even count how long it's been since I've wrote, but I will say I'm sorry. I thinking, just thinking about trying the blog thing out...again :) I feel like there's just so much happening in our lives, so much God has blessed us with, so many lesson's He's trying to get it though our thick heads, so many recipes, and last but not least- so many funny/crazy/can't make this stuff up things Audrey is doing that I want to share. And I don't want to share it on Facebook. I've found it was sucking the life out of me (as pretty much anything truly can). I don't want a social networking site to become an idol. Does that sound as crazy to you as it does to me? Yikes.

I love, love, love the idea of journaling. Do I love the idea of sitting with pen in hand to write it all down? Nope. Not in the least. As my Mom would attest to, my handwriting is horrible, ridiculous actually. It gets even worse when I'm in a hurry, tired, or trying to make it look nice :) This is where I'm thankful for computers. I think that technology is taking away some extremely important things but it does have some upsides. Maybe, just maybe in the years to come-God willing- when I'm teaching our kiddos how to write, I could improve my penmanship? Until then, I'm counting this keyboard as a huge blessing, a gift, and I'm going to use it.

A "family member" recently sent us a box full of pure joy. She sent jerky for my husband (hole-in-one), a book with animals and music for the wild woman (another hole-in-one), and two books for me (I'm a girl after her own heart). Aud had the book in Ben's lap to read in seconds flat after taking his jerky from him, and I was curled up on the love seat looking at my new books, while the music was being stored and played on itunes. The books were One Thousand Gifts by Ann Voskamp and A book on Revelation. I started the first and couldn't put it down! It's such a great book. The beginning is a little intense but turns into such an amazingly well written book on how to find the joy, thanksgiving, and grace of God in exactly what we have, what we've been gifted with right now. She starts a project of naming 1000 of them and it talks about her journey thought it. I'm almost finished with it and will probably re-read it right after I finish it. Anyways, I think I'm going to do that, name 1000 everyday gifts God has blessed me with so that I might fine true joy, thanksgiving and grace -all from Him. Things are changing here in our little family and I'm so excited about it. It's like one huge TAAA DAAA moment for me that keeps going! I'd like to start it now but want to finish reading the book first.

Aud's has been trying to cut lower teeth/molars for the past week and whew, it's been a tough one for her. Even though she's been hurting pretty good she's still our happy lil' wild woman! When she wakes up in morning she'll say HI then pannn- caaaakies (pancakes). It makes me laugh so hard! And today was the first time she asked for them after waking up from her nap! :) The girl loves her pancakes! Sometimes she'll ask for all 3 of her favorite breakfast things, eggies, toast and pancakies! She's the best! I can't wait to share some other of her moments but my man is patiently waiting for me to finish up so we can spend a few minutes together before he goes to bed!
